Every Ingredient in a CMOSS Bar, Explained

A CMOSS Bar has five ingredients. That is not a marketing constraint we imposed after the fact — it is what was left when we stopped adding things that did not earn their place. Here is each one, and why it is in there.

Wild-harvested Irish sea moss

The reason the bar exists. Irish sea moss is a red seaweed, Chondrus crispus, that grows on rocky Atlantic coastlines and has been harvested off the coasts of Ireland and the Caribbean for generations. It is one of the most mineral-dense things the ocean grows, carrying 92 of the trace minerals the body works with — iodine, potassium, magnesium, calcium, iron, zinc and many more, most in trace amounts.

Traditionally it is boiled into a gel. We build it into the bar instead, so it needs no refrigeration and no preparation. More on the seaweed itself in What Is Irish Sea Moss?

Organic dates

The base, and the reason the bar holds together. Dates bring a caramel-like sweetness and a dense, chewy structure that binds everything without any need for syrups, binders or gums. They are a whole fruit, so they carry their own fibre along with their sugars.

Dates are also why the bar does not read as a health product. A date-based chew is a familiar thing to eat, and familiarity is what makes a daily habit survive a busy week.

Manuka honey

The only sweetener beyond the dates, and the ingredient that solved our biggest problem. Raw sea moss tastes earthy and faintly of the sea, which is why most people bury gel in a smoothie. Manuka honey — a monofloral honey from the manuka bush — has enough character to cover that note completely rather than just sitting on top of it.

It is also why the bars are not vegan. Honey is an animal product, and we would rather say that plainly than dance around it.

Organic coconut oil

Texture. Coconut oil keeps the bar soft and gives it a clean mouthfeel instead of the dry, chalky finish that a lot of pressed bars end up with. It also helps the bar hold its shape at room temperature, which matters for something designed to live in a gym bag rather than a fridge.

Organic chia seeds

A little structure and a little bite. Chia gives the bar a texture that is not uniformly soft — you notice the seeds, and that small contrast is what keeps a chewy bar from feeling like paste. Chia also brings fibre and omega-3 fatty acids of its own.

What the flavours add

  • Original — nothing. Just the five.
  • Cacao — raw organic cacao, for a dark, unsweetened-chocolate depth.
  • Madagascar Vanilla — real Madagascar vanilla bean, warm and rounded.
  • Banana — real organic banana, bright and fruit-forward.

Vitamin E is used as a natural preservative. That is the whole list.

What is not in there

No refined sugar of any kind. No syrups, no protein isolates, no gums, no artificial flavours, no colours, no sugar alcohols. Gluten-free, dairy-free and non-GMO.

One honest note on allergens: the ingredients themselves are simple, but the bars are made in a facility that also processes tree nuts, soy, wheat and dairy. If you have severe allergies to any of those, please take that into account.

The numbers

28g per bar. 110 calories. 92 trace minerals from Irish sea moss. Shelf-stable for six to eight months with no refrigeration.
